Heritage Fruit Trees
Heritage Fruit Trees is run by Rob Pelletier with a small permanent team and casual helpers during the winter pick, pack and post. Glenview Park Farm, 145 acres of paradise, is near Beaufort in Victoria. Around 40 acres is farmed with the balance reasonably high quality and endangered Grassy Woodland and Heathy Dry Forest complex, including some trees the ecologists have suggested might be old growth. This section of the property is important for the ecosystem services it provides for us and the local area.
The property has included a nursery for at least three decades, first growing perennials for the nursery trade and then local provenance native plants for re-vegetation projects. It is now used to produce heirloom variety fruit trees, especially pomme fruits, blueberries, raspberries and ornamentals. The property includes a collection of over 500 varieties of heritage and some modern fruit tree varieties.
As well as quite a large mob of kangaroos, the farm includes our Maremmas Badger and Pippin, a small flock of alpacas and sheep, and the occasional marauding deer. All need to be fed regularly, except the deer.

Sault
Sault restaurant and farm established for over 20 years. Sault now has an extensive kitchen garden, growing commercial quantities of produce such as garlic, tomatoes, carrots, beans, potatoes, flowers and many more seasonal heirloom vegetables - plus extensive flower fields. Sault works hand in hand with local growers and producers. As a restaurant we offer a 3 or 4 course menu based around the farm and a 7 course Tasting menu as well as a plant based 7 course menu.
Hepburn Distillery
At Hepburn Distillery we make gin, vodka and whiskey from scratch using local, seasonal and organic ingredients. Our unique spirits are fermented and triple-distilled at our Daylesford cellar door where you enjoy tasting flights, cocktails, tours, workshops and buy our full-flavour, delicious spirits.
Wombat Forest Vineyard
Wombat Forest Vineyard and Winery EST in 1997 is a surprise package nestled on the edge of Wombat State on Springhill Road in Denver. Just 15 minutes from Daylesford, this family-owned and operated vineyard blends seamlessly into the natural environment with an abundance of native bird and wildlife on the doorstep. Using sustainable and environmentally-friendly practices, expect to sample cool climate boutique wines along with seasonal platters of local produce at the cellar door; or take to the variety of outdoor areas to relax, like decks, landings, a courtyard and grassed areas. They are known for their award winning Blanc de Noir. Guests enjoy a glass of Pinot Noir, aged in French oak with an extended ripening period enhancing fruit flavour and subtle tannins; or pair a crisp glass of Pinot Gris with a cheese and charcuterie selection.
